Does anyone know? I've tried searching and can't find an answer to this. Is carnosine sensitive to light/air or is it stable? Thanks if anyone can tell me. |

Carnosine like most antioxidants doesn't have to be in living tissue to have an affinity for oxygen. It's not just about lipid peroxidation. It is used as a way to maintain the color of meat. If exposed to air it changes from white to yellow, indicating a redox reaction with ambient 02. |

Thank you DrJ. So are you saying yes it does oxidize? I'm asking in relation to packaging, ie jar packaging vs. airless pumps. I'm also thinking in relation to DIY. I thought carnosine was an amino acid and not an antioxidant. |

dipeptide made up of the amino acids beta-alanine and histidine. It's an antioxidant plus chelator plus .... |
